Ingredients (Serves 8)      

  • 2 meagres (700 to 800 g)
  • 100 g Philadelphia
  • 1 bunch parsley  
  • 1/2 bunch chives
  • 1 lemon
  • salt
  • Espelette pepper
  • olive oil 


  • Ask the fishmonger to gut the meagres. Rinse and pat dry.
  • Turn on the barbecue and bring to medium heat.
  • In a mixing bowl, finely mix the parsley leaves and chives with the Philadelphia. Season with salt and Espelette pepper.
  • Cut the lemon into 4 to 5 thin slices and set aside. Press the juice from the remaining lemon and add to the cheese. Mix well.
  • Garnish the meagres with the herb cheese. Leave the rest to cool in the fridge.
  • Brush the meagres with olive oil and place on the barbecue grill. Place the lemon slices on the flanks. Grill for 7 to 8 minutes on each side.
  • Serve hot or warm, accompanied by the remaining herb cheese.


  • Mullet, another seasonal fish, also goes wonderfully with this recipe.
  • This fish is delicious served with grilled courgettes.
