Ingredients

Serves 2:
For the tournedos :
- 2 beef tournedos
- 2 slices of fresh or semi-cooked foie gras
- 15 cl of full cream
- 1 small truffle
For the pommes dauphines :
- 250 g potatoes
- 15 cl water
- 40 g butter
- 2 eggs
- 70 g flour
- salt
- White pepper.

Preparation

  • Peel the potatoes and boil them for 20 to 25 minutes.
  • Put them through a food mill and set aside.
  • Preheat the oven to 200°C.

Prepare the choux pastry:

  • In a saucepan, bring the water, butter and pinch of salt to the boil.
  • Add the flour all at once and mix well, until the dough pulls away from the sides of the pan.
  • Leave to cool off the heat for about 5 minutes.
  • Add the eggs and mix well.
  • Add the mashed potatoes to the cabbage mixture and season with salt and pepper. Mix well.
  • Pour the mixture into a piping bag.
  • Place on a non-stick baking sheet and form domes of about 3 cm in diameter.
  • Bake for 25-30 minutes.
  • Bring the cream to the boil in a small saucepan.
  • Remove from the heat and add a few truffle fragments. Leave to infuse.
  • Cook the beef tournedos in a hot pan.
  • Quickly brown the slices of foie gras in a hot pan.

Proceed with the presentation:

  • On a warm serving plate, spread a little truffle cream.
  • Add the beef tournedos and top with the pan-fried foie gras.
  • Finish with a few slices of truffle.
  • Add a few hot pommes dauphines to the plate.
  • Serve hot.

Suggestion:

  • If you have a smaller budget, you can use truffle chips for this recipe.
  • In this recipe, the apples are baked in the oven to reduce the fat content of the dish.
  • However, if you wish to cook them in the traditional way, you will have to make balls of dough and cook them for 4 to 5 minutes in a hot frying bath.
  • The quantities are for about 20 to 25 pommes dauphines.
