Wok of duck with winter vegetables

Ingredients

Serve 4:
- 500 g duck aiguillettes
- 1 leek white
- 5 medium carrots
- about fifteen button mushrooms
- ½ Chinese cabbage
- 2 cloves of garlic
- 3 tablespoons of soy sauce
- 2 tablespoons of honey
- 1 tablespoon brown sesame seeds
- 1 tablespoon black sesame seeds
- Olive oil
- Japanese pepper
- Coriander

Preparation

  • In a salad bowl, marinate the duck aiguillettes in soy sauce, honey and 2 tablespoons of olive oil. Add Japanese pepper.
  • Leave to marinate for 1 hour, stirring from time to time.
  • Peel the carrots and cut them into thin sticks of about 5 cm.
  • Do the same with the leek white.
  • Peel the button mushrooms and cut them into thin strips.
  • Wash the Chinese cabbage and cut into strips.
  • Heat a wok with olive oil. Sauté the carrots for 7 to 8 minutes, stirring constantly.
  • Add the leek slices and sauté for 5-6 minutes, stirring constantly. Add the mushrooms and then the Chinese cabbage.
  • Add the crushed and degermed garlic. Sauté for 2 minutes. Remove from the heat and set aside.
  • In the same wok rid of the cooking juices, brown the duck aiguillettes without their marinade.
  • Cook over high heat for 5 to 7 minutes. Add the brown and black sesame seeds. Remove from the heat and set aside.
  • Return the vegetables to the wok, add the marinade and stir well over high heat for 1 minute.
  • Arrange vegetables and duck needles on a serving plate, sprinkle with chopped coriander.

Suggestions:

  • Japanese pepper is not very strong and has a slight lemony flavour. You will find it on sale in Asian grocery shops. It can be replaced in this recipe by Espelette pepper.
  • - The duck can be replaced in this recipe by chicken aiguillettes. In this case, do not hesitate to add a lime to the marinade, it will twist the flavours a little!
