Oysters au gratin with foie gras

Serves 4

-12 oysters, calibre no. 4
- 30 g foie gras
- 10 cl cream
- 20 g panko breadcrumbs
- 1 large shallot
- Gingerbread spices


  • In a saucepan, melt the foie gras in the single cream. Add a pinch of Espelette pepper. Pulse with a hand blender. Set aside.
  • Preheat the oven to 180°C.
  • Open the oysters, drain and set aside.
  • Peel the shallot and chop finely. Spread the shallot into the oysters. Add a teaspoon of the foie gras cream. Cover with breadcrumbs and add a pinch of gingerbread spices.
  • Cook for 5 minutes. Set the oven to grill mode and broil for 3 minutes.
  • Serve piping hot with a chilled 2019 Château de Bonnet Blanc.



  • If you cannot find panko (a type of Asian breadcrumb), use regular, coarse breadcrumbs.
  • Gingerbread spices are a blend of cinnamon, cardamom, clove, star anise, ginger and nutmeg. You can buy pre-blended spices or create your own to taste.
