Prawns with aniseed cream

Ingredients

Serves 2:
- 250 g raw peeled prawns or shrimps
- 1 tablespoon of flour
- 20 cl full cream
- 3 star anise
- salt
- white pepper
- olive oil.

Preparation

  • In a saucepan, bring the liquid full cream to the boil.
  • Turn off the heat, add the star anise and leave to infuse for at least 20 minutes.
  • Drain the shelled prawns well.
  • Lightly flour them.
  • Heat a little olive oil in a frying pan over medium heat and cook the prawns for 3 to 4 minutes, stirring constantly.
  • Season with salt and pepper.
  • Add the infused cream, removing the star anise beforehand.
  • Simmer on low heat for 2 to 3 minutes.
  • Serve hot, decorated with dill sprigs.

Suggestions:

  • You can use frozen prawns or shrimps: just defrost them the day before in the refrigerator and rinse them before use.
  • This starter can also be made for an aperitif.
