Ingredients

Serves 4

For the endive salad with grey shrimps, avocado, mandarin and wasabi:
 - 100 g cooked and peeled grey shrimps
 - 2 endives
 - 1 avocado
 - 2 tangerines
 - 1 teaspoon of wasabi
 - 2 tablespoons lemon juice
 - 2 tablespoons of oil
 - Salt
 - Coriander.

For shrimps flambéed with vodka:
 - 200 g of raw and peeled shrimp
 - 3 tablespoons of soy sauce
 - 6 tablespoons of vodka
 - 1 clove of garlic
 - 2 cm fresh ginger root
 - Lime zest.

 For shrimp bricks with smoked paprika:
 - 16 cooked shrimps, not peeled
 - 4 sheets of brick
 - Smoked paprika
 - Coriander
 - Olive oil

Preparation

Start preparing the prawns flambéed with vodka:

  • in a salad bowl, marinate the prawns in soy sauce, 2 tablespoons of vodka & crushed garlic with the peeled & grated ginger.
  • Leave to marinate for 1 hour.

Continue with the shrimp bricks with smoked paprika:

  • Peel the shrimp, keeping the last section of the shell close to the tail. Brush the brick leaves with olive oil, sprinkle with smoked paprika and cut into quarters.
  • Place a shrimp on the quarter of the brick leaf, cover with 2 or 3 coriander leaves. Fold the brick sheet to form a cigar around the shrimp.
  • Place the prawns on a baking tray.
  • Preheat the oven to 200°C. Bake in the oven for 7 to 8 minutes, turning halfway through.

Prepare the salad:

  • Cut the endives into thin slices. Arrange on the serving plate.
  • Add the grey shrimps and the diced avocado.
  • Remove the tangerine supremes, keep the remaining juice. Arrange the supremes on the salad.
  • Add the chopped coriander. Sprinkle with a few wasabi tips. Prepare a vinaigrette with the tangerine juice, lemon juice, remaining wasabi and oil. Mix well and spread over the endive salad.

Finish with the marinated shrimps:

  • Drain the shrimps, fry them in a non-stick pan over high heat for 3-4 minutes, stirring constantly.
  • Add the remaining vodka and flambé. Wait for the flame to go out by itself.
  • Remove, add lime zest and arrange on a serving plate.
  • Also add the shrimp bricks with smoked paprika to the serving plate.

Suggestions

  •  You can use frozen shrimps for the recipe for Shrimp Flambéed with Vodka. In this case, make sure they are thawed before marinating.
  • For a softer version of the smoked paprika shrimp bricks, you can add crushed avocado to the shrimp before rolling it in the brick sheet.
  • For the endive salad, tangerine can be replaced by pink grapefruit.
