Beef and veal meatballs with spring vegetables

Ingredients

Serves 4 to 5:

For the meatballs:
- 600 g beef
- 600 g of veal
- 1 large onion
- 1/2 bunch of coriander
- 1 egg
- olive oil
- salt
- freshly ground pepper.
For the vegetables:
- 12 baby carrots
- 12 baby turnips.

Preparation

  • Scrape the carrots and turnips and cut off the tops.
  • Wash and brush them and steam them for about 15 minutes.
  • Set aside.
  • Peel and quarter the onion.
  • Wash the coriander.
  • Cut the beef and veal into large cubes.
  • Chop the veal, beef, onion and coriander in a meat grinder.
  • Add the whole egg to this mixture.
  • Season with salt and pepper.
  • Form balls the size of a large walnut.
  • Fry them in a hot pan with olive oil, turning them over on both sides.
  • Serve the meatballs with the vegetables.

Suggestion:

  •  Instead of baby vegetables, carrots and turnips cut into pieces can be used.
  • This proportion of meat makes about 25 dumplings.
