Chicken Fajitas with Spicy Guacamole

Ingredients

Serves 4:
For the spicy guacamole:
- 2 ripe avocados
- juice of 1 lime
- 1/2 red onion
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chilli & spice mix
- 1 bunch of coriander
- salt

For the chicken:
- 4 chicken breasts
- salt
- chilli & spice mix

For the wrap and filling:
- 4 large wheat wraps
- baby spinach leaves
- 1 red pepper
- 4 onions
- 1 tablespoon pomegranate molasses
- salt
- oil

Preparation

Prepare the candied onions:

  • Peel the 4 onions, cut them into thin strips and fry them in a pan with a little oil.
  • Cook over medium heat for 15 minutes, stirring frequently.
  • Add the pomegranate molasses and cook for another 5 minutes, stirring constantly.
  • Season with salt and set aside.

  •     Wash the red pepper, remove the stalk and the seeds, also remove the white parts.
  •     Cut into strips. Set aside.

Prepare the guacamole:

  • Peel and remove the stone from the avocados.   
  • Mash the flesh with a fork.
  • Add diced red onion, lime juice, cumin, smoked paprika and chilli & spice mix. Season with salt. Mix well.
  • Wash and chop the coriander. Add to the avocado mixture. Mix well and store in the refrigerator

  •  Cut the chicken breasts into strips.
  • Fry them in a pan for about ten minutes, stirring frequently.
  • Season with salt and chilli & spice mix. Set aside.

  • Heat the wheat wraps in the microwave for about 20 seconds.

Proceed with the dressing:

  • On a wheat wrap, spread a generous layer of guacamole.
  • Add spinach shoots, red pepper strips, chicken slices and pickled onions.
  • Serve immediately.

Suggestion

  • Pomegranate molasses can be bought in oriental grocery shops. If not, it can be replaced by balsamic vinegar, in equal quantities.
  • For this recipe, you will find "Chilli & Spice" mixes in most supermarkets.
  • To make the pepper more digestible, do not hesitate to remove the skin with a peeler.
  • The pepper is used raw in this recipe to add crunch, but it can also be cooked with the chicken strips.
  • Diced tomato or corn can also be added to the wrap, depending on your taste.
  • It's even better with homemade wheat wraps or corn wraps!
