Tagliatelle of courgette with carbonara sauce

Serves 2:
- 2 medium-sized courgettes
- 150 g pancetta
- 4 egg yolks
- 50 g parmesan cheese
- olive oil
- salt
- freshly ground pepper.


  • Wash the courgettes.
  • Cut off the ends and cut in half lengthwise.
  • Using a mandolin, slice thinly lengthways.
  • Place the courgette strips in a steamer basket and steam for 15 minutes.
  • Cut the pancetta into thin strips. Fry it in a frying pan with a little olive oil over medium heat until it becomes crispy.
  • In a salad bowl, mix the egg yolks with the grated Parmesan, add 3 to 4 spoonfuls of hot water to loosen the mixture.
  • Season with salt and pepper.
  • In a frying pan, gently mix the courgette tagliatelle with the pancetta and the egg and parmesan mixture.
  • Divide between serving plates.
  • Decorate with grated parmesan. Serve hot.

Suggestions :

  • The pancetta can be replaced by coppa.
  • You can also replace the grated parmesan with grated pecorino.
  • Choose rather thin and long courgettes in order to obtain nice tagliatelle.
