Making rosés

A useful fact: rosé wine is never produced by mixing white and red wine. It is always made only from red grapes – in this instance, Merlot and Cabernet Sauvignon – like our red wines.

Once again, the grapes are frequently analysed to choose the best date to start picking. To make the best possible red wine, we wait for optimum ripeness in each grape variety.

However, the situation is different for rosés. The grapes should not be overly ripe because that would detract from the freshness and fruitiness sought after in this type of wine [the acidity (malic acid) needs to be greater than for red wine, and the degree of alcohol should not be too high...].

Merlot and Cabernet Sauvignon are thus both picked when the grapes are quite fresh (rather than very ripe).



There are two ways of making rosé wines: either by saignée ("bleeding" off a vat of fermenting red wine) or by pressing. Vignobles André Lurton uses the latter at Château Bonnet .

Once the grapes are picked, they are brought to a pneumatic winepress where they are left to macerate for 12-24 hours before pressing.  The rosé's colour depends on the ripeness of the grapes. The riper the berries, the easier it is to extract colour.

As soon as the grape juice comes out of the press, it is put into a cold room to settle for 2 or 3 days. 

The must is then ready for fermentation. This takes place in stainless steel vats with perfect temperature control for 10-15 days. The wine's fruity characteristics are obtained during fermentation in vat. 

Once this is finished, generally towards the end of the year (in mid-November), it is blended. Our cellar masters and oenologists organise several tasting sessions to evaluate the wine in each vat in order to make the best possible blend.

After fining and cold stabilisation, the wine is bottled at several different times, keeping pace with demand. All our bottles [Château Bonnet rosé , Château Tour de Bonnet rosé ] have screwcaps. This type of totally hermetic closure is perfectly adapted to our rosé wines and enables them to retain all their fresh fruit aromas.
